Meadow. It was a bit trickier than I first thought it would be, but it was fun. We glanced at the Solo Variant and it didn't look too bad. She's gonna try it soon, hopefully. If so, I'll report back. Here's a 2-Player game:

FWIW, Meadow is by the same Designer that did Dream Home.
The main gameboard even has cut-outs where the N,S,E, and W card trays sit, so the don't slide around. Halfway through the rounds, you swap-out the South deck with the North one. The North cards are more difficult to acquire then the South, but are worth more points. There are two physical "bonus boards" that are dual-sided. The Solo board has the 2-Player on the reverse side, and the 2nd board has 3-Player on one side and 4-Player on the other. Here's the 3 and 1 boards:
